Golden Yunnan Special Grade Red (Black) Tea is made entirely of small buds from assamica camellia trees in Yunnan.
The careful picking during the harvest provides a unique product capable of satisfy even the palates of the people who usually don’t consume red tea because of its tannic features.
The aspect of the Golden Yunnan can remind some Yin Zhen white teas but the golden color of the bud show that the product was carefully totally oxidate.
In fact, thanks to the care in processing and harvesting chosen, Golden Yunnan Special Grade Red (Black) Tea does not express the typical characteristics of oxidation in the cup but instead retains a slight vegetal tone.
On the palate the infuse come off also with a soft floral aroma before taking all the mouth with its sweetness that, because of the vegetal presence, it reminds the sugar cane flavor.
In the aftertaste it’s possible to feel the oxidate part in the form of a raw chocolate taste that leaves, at the end of the drinking experience, a pleasant soft and warm feeling on the palate.
Because of the similarity between this tea and the previously mentioned Yin Zhen, we suggest you to try our Yunnan Silver Needle White Tea in order to discover the effects of different oxidations on the young camelia leaves.

Production
After harvesting, the leaves of Golden Yunnan Special Grade Red (Black) Tea are left to wither in the sun according to the timings arranged by the manufacturer before moving on to the folding stage.
During this processing the product is mechanically and manually manipulated in order to mix the juices inside of the leaves.
Here it begins a constant oxidative activity that could be mange by moving the product to controlled temperature rooms. When the leaf reaches its typical dark brown color it’s time for removing the leftover humidity in the vegetal mass using steams of hot air.
After a few days’ rest, the tea is ready for consumption.
Infusion Method of Red (Black) Tea Golden Yunnan Special Grade
We strongly recommend infusing Golden Yunnan Special Grade Red (Black) Tea in the traditional Chinese method (Gong Fu Cha) with a Gaiwan with a capacity of about 100 ml. Following this brewing technique you can, with 5 grams of leaves, do multiple infusions and have the most complete tasting experience of your tea.
After a brief rinse of the leaves in water at a temperature of 90°C you can do a first infusion of 10 seconds and, after that, maintaining the same water temperature, you can continue to push the product rising up the previous steeping time of 5 seconds (10 – 15 – 20…).
In order to have a more traditional brew in the Western style we suggest to steep 3 grams of leaves (about 2 teaspoons) for one minute and an half, using water at a temperature of 90°C in a mug with an approximate capacity of 150 ml.
For a better tasting experience we suggest to filter the infuse as close as possible to the proper steeping time indication. The brewing time recommendations, however, can also be slightly adjust by your personal taste in order to obtain a strong or more delicate cup of tea.
