Tasting – Sight and smell
Simao organic puer sheng tea has medium to large leaves with various shades of brown and chestnut and many silvery-white buds. The infusion is very aromatic: there are notes of cooked fruit, frankincense, myrrh, camphor and burnt wood. Tasting Notes
GONG FU CHA
The first infusion of Simao organic puer sheng tea is characterized by notes of incense and firewood, which are followed by sweeter hints of fruit, such as baked apple or yellow apple. With the second infusion, the fruity notes become more pronounced and sour hints appear that are very well balanced with the sweet hints. Astringency, while noticeable, is minimal and not disturbing. The third and following infusions result in a softer, sweeter liquor with camphorated notes at the close.
WESTERN
A first sip of Simao’s organic puer sheng tea reveals empyreumatic notes of ash and burnt wood, followed by notes of incense that leave a good sensation of freshness on the palate. The sweetness is well balanced by mild astringency: there are notes of strawberry tree honey and fruity hints of green apple, with a mild and pleasant acidity. Persistence is balsamic: hints of incense return with hints of camphor that linger long on the tongue.

How to prepare
We strongly recommend infusing Simao organic puer sheng tea in the traditional Chinese method (gong fu cha) to best enjoy these leaves. Following this preparation, 4 grams of leaves (about 3 teaspoons) can be used in a gaiwan of about 100 ml to make several infusions with different tastes. After a quick rinsing of the leaves in water at 100°C, you can proceed with a first infusion of 10 seconds and, after which, keeping the water at the same temperature, proceed with multiple infusions, each time increasing the time by 5 seconds (10 – 15 – 20 …)
This tea has a longevity of about 5 infusions.
For a classic preparation according to the western style we suggest 2 grams of leaves (about 1 teaspoon) in a 150 ml cup with water at 100°C for an infusion time of one minute and a half.
The tea can be filtered for greater ease at the moment of tasting, and also the infusion times indicated above are intended to be purely indicative, so you can also adjust according to your personal taste.
Simao organic puer sheng tea is recommended to be stored in a cool, dry place away from direct sunlight.
