A tasty marinated salmon accompanied by Japanese noodles and a Matcha green tea dressing. An unusual and surprising taste.

Ingredients
- 400 g of salmon fillet without skin and without bones
- 200 g soba noodles (Japanese noodles)
- a few drops of sesame oil
Matcha Tea Dressing
- salt and freshly ground pepper
Tools
- 1 large non-stick frying pan
- 1 large plate
- 1 pot
- 1 sieve
- kitchen paper and cling film
Salmon preparation with Tea dressing matcha
Wash fish and dry thoroughly. Heat skillet; sear salmon fillet for about 30 seconds on each side. Season both sides while cooking. Lay in large dish, cover with plastic wrap and refrigerate for 4 hours.
Bring a large saucepan of water to a boil, add soba noodles and cook for about 2 minutes. Drain and submerge in ice water. Then drain again and add a little sesame oil to prevent sticking.
When the salmon is cold, slice it into thin strips. Divide the noodles between plates, arrange the salmon strips into rosettes and serve accompanied by the green tea dressing.
How to prepare Matcha Tea Dressing

Preparation time: 5 minutes
Ingredients
- 2 teaspoons of matcha tea powder
- 1 pinch each pepper and salt
- 1 tablespoon of mustard (optional)
- White vinegar 5 cl
- Rice vinegar 5 cl
- 25 cl sunflower oil
Tools
- 1 salad bowl
- 1 whisk
How to prepare the dressing
In a salad bowl, combine salt, pepper and mustard.
Add the Matcha tea powder and mix well with a whisk. Next gradually add the vinegars and finally the oil, taking care to continue whisking vigorously to create an emulsion.
