A fresh and delicate dish: peaches with bergamot red tea syrup are perfect for the start of summer. A tasty, light and healthy dessert!

Ingredients
For peaches
- 2 peaches
- 2 yellow nectarines
- fresh mint
- lime jus
For the infusion of red bergamot tea
- 125ml water
- 1 teaspoon of red (black) bergamot tea Fo Shou Gan
- 1 cardamom berry
- ½ cm of ginger
- 15ml maple syrup
- lime jus
Preparation
We heat the water and infuse the red bergamot tea, add the crushed cardamom berry, ginger and a little lime juice.
Let it infuse for 5 minutes then strain and return to the heat adding the maple syrup. Let it reduce by half over a very low heat.
We cut the peeled peaches into very small cubes, season them with lime juice to prevent them from turning black and add a few chopped mint leaves. Stir and leave to gain flavour.
