This tea has been produced and cared for by the Japanese company TEAET, which is committed to promoting a particular assortment of leaves in handy sachets. This particular selection of Japanese teas includes a non-oxidised product. The green leaves of this product are treated in the same way as those of a sencha are treated before meeting the yuzu peel. This citrus fruit of Asian origin has a unique freshness that lends itself well to a fresh tea from the early spring harvest. TEAET wants to offer this blend of cultivars made from the Yutakamidori and Seamidori camellia varieties to bring to the West an example of unoxidised tea that differs from the better known products of the same type from China and India.
The flavour and body of this tea and yuzu blend will be quite full-bodied while still providing plenty of freshness on the palate. The merit of this very rounded and pleasant body is due to the wealth of polyphenols in the green tea leaves, which also release a taste of freshly cut grass in the aftertaste. Before we get to the aftertaste, however, the star is definitely the yuzu which makes itself felt on the palate with its characteristic freshness followed by a slight citrus sharpness. Overall, as in the oolong with ginger pieces, we have a well-balanced mix of flavours thanks to the careful proportion of tea leaves and dried yuzu peel.
Place of origin
Kagoshima – Japan
Production
This green tea is brewed in the classic Japanese style, i.e. the freshly picked leaves are left to wither for a short time and then flooded with very hot steam, which within 15 to 20 seconds accomplishes the process of “killing the green” by deactivating the enzymes that would cause the leaf to oxidise. After this important stage, the leaves are rolled to enhance their flavours and dried using hot air jets to be ready for use. At the end of the process, the leaves are mixed with pieces of yuzu peel in a certain proportion.
