It is also an organic tea from Mount Jingmai in the famous Puer Autonomous Province, Yunnan.
Tasting – Sight and smell
Jade Snail 1st Grade organic green tea has leaves and buds rolled and wrapped rather tightly around themselves, like little snails, hence the name. The color of the leaves is dark forest green and creates a beautiful melange with the creamy-white of the buds, which are covered with a soft, shiny bai hao. Once infused, the leaves release aromas of sweet corn, pumpkin and baked carrots, with a vegetal freshness reminiscent of young bamboo and a caramelized sweetness reminiscent of tomato compote. As the leaves open in the gaiwan, infusion after infusion, hints of freshly cut grass and a very delicate floral hint also appear. In the cup, the liquor is straw yellow, transparent and very bright.

GONG FU CHA
Jade Snail 1st Grade organic green tea infusion brings with it the sweetness of corn and spring vegetables such as fresh peas and fava beans. Sweet notes evolve into tomato jam, with a body that is incredibly silky on the palate. The second infusion is slightly herbaceous and more assertive, with a floral finish reminiscent of wildflowers. Even with the third infusion, the tea remains devoid of bitterness: the initial sweetness returns but with more intensity in the taste: baked pumpkin and caramelized carrots are felt, while the persistence is floral, denoting the refinement of this tea.
WESTERN
The first notes of Jade Snail 1st Grade organic green tea are vegetal: first baked squash and carrots, then fresher hints of peas, fava beans, and bamboo shoots. There is also an elegant note of white flowers, which gives way to a surprising roasted, almond and peanut finish. Smelling the bottom of the cup, there is also a distinct caramel aroma, a testament to the incredible sweetness of this tea. No bitterness or astringency, silky, light body and a very fresh, floral persistence.

How to prepare
We strongly recommend infusing Jade Snail green tea by the traditional Chinese method (gong fu cha) to best enjoy these leaves. Following this preparation, 4 grams of leaves (about 3 teaspoons) can be used in a gaiwan of about 100 ml to make several infusions with different tastes. After a quick rinse of the leaves in 95°C water, an initial 10-second infusion can be made, and after that, keeping the water at the same temperature, proceed with multiple infusions, each time increasing the time by 5 seconds (10 – 15 – 20 …).
For a classic preparation according to the Western style we recommend 2 grams of leaves (approx. 1 teaspoon) in a 150 ml cup with water at 95°C for an infusion time of one and a half minutes.
The tea can be filtered for greater ease at the moment of tasting, and also the infusion times indicated above are intended to be purely indicative, so you can also adjust according to your personal taste.
