Tasting – Sight and smell
The leaves of Ya Shi Xiang Phoenix Dan Cong Oolong Tea appear various shades of brown, from deep brown to ochre. They are long, medium-sized and masterfully crafted-the shape is slightly rolled. The infusion has intense notes of white flowers and monoi. Light hints of tropical fruits such as coconut, papaya, and pineapple in syrup also appear on the nose. Tasting Notes
GONG FU CHA
The first infusion of Ya Shi Xiang Phoenix Dan Cong Oolong Tea opens with notes of magnolia, wisteria, and monoi, with extraordinary intensity. With the second infusion, hints of butter, cookies and shortbread also appear, albeit delicate on the palate. The third and subsequent infusions bring with them not only definite floral scents but also the sweetness of powdered sugar. The persistence is long, sweet and floral.
WESTERN
Flowers are definitely the most characteristic note of this Ya Shi Xiang Phoenix Dan Cong Oolong Tea: we find magnolia, wisteria, monoi and a distant hint of jasmine. The evolution is soft, with secondary notes of butter cookies and shortbread. A hint of vanilla sugar is added before a floral closure, with monoi and magnolia returning to dominate the finish.

Production
After the harvest the leaves of the Phoenix Dan Cong Ya Shi Xiang Oolong Tea wither under the sunlight for a period of time between 10 and 20 minutes before going on bamboo trays indoor. Here it’s where the oxidation starts thanks to a manipulation of the leaves (the shaking) made by the tea master.
When the leaves have the desire oxidation level (generally for Dan Con it is between the 50% and 80%) the leaves go into an oven heated up by coal where the enzymes related to the oxidation process are deactivated.
After this phase the leaves are mechanical rolled in their final form before going into a series of roasting period where the product is dried a bit more and consolidate its flavors.
Brewing instructions for the Phoenix Dan Cong Ya Shi Xiang Oolong Tea
We invite you to brew the Phoenix Dan Cong Ya Shi Xiang Oolong Tea in the traditional Chinese style (Gong Fu Cha) with a Gaiwan of an approximate capacity of 100 ml. Following this brewing technique you can, with 5 grams of leaves, do multiple infusions and have the most complete tasting experience of your tea.
After a brief rinse of the leaves in water at a temperature of 90°C you can do a first infusion of 15 seconds and, after that, maintaining the same water temperature, you can continue to push the product rising up the previous steeping time of 10 seconds (15 – 25 – 35…).
In order to have a more traditional brew in the Western style we suggest to steep 3 grams of leaves (about 2 teaspoons) for one minute and an half, using water at a temperature of 90°C in a mug with an approximate capacity of 150 ml.
For a better tasting experience we suggest to filter the infuse as close as possible to the proper steeping time indication. Our brewing time recommendations can also be slightly adjust by your personal taste in order to obtain a stronger or more delicate cup of tea.
