Yunnan Old Bush Organic Red (Black) Tea comes from Puer in China’s Yunnan Province and originates from the historic Yunnan Big Leaf cultivar. It has been cultivated according to the principles of Organic Farming, which makes it a product with exceptional organoleptic qualities. This is a complex and balanced tea that caresses the palate like velvet and envelops with its fruity, spicy and sweet notes.
Tasting – Sight and smell
Yunnan Old Bush organic red tea has very tapered and thin whole leaves with a rolled shape. The color is a shiny charcoal gray with lots of golden buds. On the nose, the infused leaves release aromas of malt, wood (with a slight smoky note), sweet fruits such as dates and raisins, and a floral finish that has hints of rose. The liquor is dark orange in color with bright amber highlights.
Tasting Notes
GONG FU CHA
The first infusion of Yunnan Old Bush organic red tea brings with it fruity notes: hints of red fruit compote, winter baked fruit (apples) and baked plums are on the palate. A hint of dry wood and an interesting peppery note also emerge, anticipating a floral finish. The second infusion has a very intense spicy note in the opening, traceable to a mix of black pepper and white pepper. Malt, baked apple and a slight empyreumatic note then appear to accompany the woody hints. With the third and subsequent infusions, the floral hint of rose stands out above all others, followed by spicy notes and a sweetness of baked plum at the close that softly envelops the palate.
WESTERN
Yunnan Old Bush organic red tea opens with a bitter cocoa note, followed by malty and woody scented hints. There are then spicy notes of pepper and nutmeg and fruity notes of cooked apples and plum syrup. The slight bitterness at the end is well balanced by the sweetness of the fruit notes, which linger for a long time along with the pepper notes. A tea with a dense and velvety body, very soft on the palate.

Infusion time of Yunnan Old Bush Organic Red (Black) Tea
We strongly recommend infusing Yunnan Old Bush tea by the traditional Chinese method (gong fu cha) to best enjoy these leaves. Following this preparation, 7 grams of leaves (about 3 teaspoons) can be used in a gaiwan of about 180 ml to make several infusions with different tastes. After a quick rinse of the leaves in water at 95°C, an initial infusion of 10 seconds can be made, after which, keeping the water at the same temperature, the time can be increased each time by 10 seconds compared to the previous infusion (10 – 20 – 30…).
This tea has a longevity of about 7 brewings.
For a classic preparation according to the Western style, we recommend 3 grams of leaves (approx. 2 teaspoons) in a 150 ml cup with water at 95°C for an infusion time of one and a half minutes.
The tea can be filtered for greater ease at the moment of tasting, and also the infusion times indicated above are intended to be purely indicative, so you can also adjust according to your personal taste.
It is suggested during the tasting to try to let the tea rest in the cup for about one minute before drinking it in order to better taste its sweetness.
