Organic Bancha Green Tea from Yabukita cultivar is ideal for those who cannot have too much caffeine in their diet: in fact, its leaves contain a lower level of it than other green teas. This is a milder than average bancha and certainly more elegant, silky-bodied bancha, suitable for those who seek the umami hint of Japanese teas but do not like overly intense marine notes.
The leaves of this tea come from a spring harvest performed mechanically in Kirishima (Kagoshima).
Tasting – Sight and smell
Organic Bancha green tea has flattened shaped leaves with a glossy surface, medium size and color ranging from sage green to dark blue-green. Once infused, its leaves give off a savory and sweet vegetable broth aroma, as well as a marine hint reminiscent of salty breeze and wakame seaweed. The liquor in the cup is light yellow, bright and medium transparent.
Tasting Notes
CLASSIC TEAPOT OR KYUSU
The opening of Bancha Organic Green Tea is salty and marine, with hints of wakame seaweed. This is followed by a sweet and very mild umami and a vegetal note of zucchini and fresh grass. The finish is surprisingly sugary and very soft, with a short, pleasantly vegetal persistence. The body turns out to be rather dense and velvety on the palate; neither bitterness nor astringency is perceived.

Brewing method
Place 5 grams of organic Bancha green tea leaves (about three teaspoons) in a Japanese Kyusu-type teapot or, in its absence, in a teapot possibly with a wide, flat bottom.
Pour 250 ml water at a temperature of 80°C on the leaves, and after two minutes you can start pouring the infusion into cups. To make the most of the leaves and continue the taste experience with this tea, we also recommend making another three infusions of the same leaves with the same quantity and temperature parameters but extending the infusion time by 5-10 seconds.
The tea can be filtered for greater ease at the moment of tasting, and also the infusion times indicated above are intended to be purely indicative, so you can also adjust according to your personal taste.
As we are talking about a Japanese green tea, it is also possible to make a delicious infusion in cold water before proceeding with hot water. For the latter, we recommend, with the same grams of leaves per amount of water, an infusion time of about 10 minutes.
