Simple Vegetarian Recipe: Vegan Spring Rolls
Ingredients for 4 persons:
- 12 sheets of rice paper
- 100g cooked rice vermicelli noodles
- 1 carrot, cut into julienne strips
- 1 cucumber, cut into julienne strips
- 1 avocado, sliced
- Fresh lettuce leaves or spinach
- Fresh mint leaves
- Soy sauce or sweet and sour sauce to accompany
Instructions:
- Prepare all the ingredients and place them so that they are easily accessible.
- Fill a large bowl with warm water.
- Gently dip a sheet of rice paper into the water for about 15-20 seconds, until it becomes soft and pliable.
- Place the sheet of rice paper on a flat, dry surface.
- In the center of the rice paper sheet, place a small amount of cooked rice vermicelli, followed by layers of carrot, cucumber, avocado, lettuce or spinach leaves and mint leaves.
- Fold the short sides of the rice paper sheet inward, then gently roll the sheet over the filling, taking care to maintain a tight, compact shape.
- Repeat the process with the other sheets of rice paper and ingredients.
- Serve vegan spring rolls with soy sauce or sweet and sour sauce for an extra touch of flavor.
Note: Spring rolls can be customized with a variety of ingredients, such as marinated tofu, mushrooms, soybean sprouts or peppers, to suit your personal tastes and preferences.
